in a heavy bottomed pan, slowly brown onions in butter and sugar until the onions are a dark brown, about 30 minutes. Add flour and cook, stirring for about 2 - 3 minutes; Add the wine and cook for 2 - 3 minutes. Add the stock and simmer for 1 hour. To make French onion soup add a large crouton on top of each bowl, cover with mozzarella cheese and put under broiler until cheese is melted.
