Preheat oven to 400; pierce potatoes with a fork; bake for 45 mins. Remove from oven & cool. Whenc ool, remove skin & chop potatoes. Combine sweet potatoes & 3/4c of broth in blender or food processor. Blend or process until smooth, set aside. Melt butter in saucepan, stir in flour & ginger and then add milk. Cook, stirring until slightly thickened & bubbly, about 5mns. Add sweet potato mixture & remaining 1 1/4c broth. Cook & stir until heated through.
