How Do I Make Potato, Mushroom and Leek Soup?Here is how you make Potato, Mushroom and Leek Soup: Add olive oil to a pot. Saute 3 cloves of garlic and one leek that has been diced. Add potatoes skinned and cubed. Add broth and cook until potatoes are tender.While potates are cooking, in another pan add the margarine. Saute 2nd leek, 3 remaining garlic cloves and sliced mushrooms. Saute until mushrooms are nice and brown and tender. After potatoes are soft, remove partial amounts of soup and blend to give a creamier texture. Add back to soup, and add in half and half and milk as well as 1 tsp salt. (May omit if desired.) Add in sauteed mushrooms, leek, and garlic. Warm throughout.Add salt and pepper to taste. May top with grated cheese if desired.
