The ingredients for Cheesey Soup Quesadillas are:

1.5 lbs boneless skinless chicken breast
2 cans cheddar cheese soup
10 tortillas (I am using flax ones)
2 c salsa
.5-1 c milk for consistancy
Optional: If I have green or red peppers, onions, etc on hand, I'll throw them in in small pieces.


How Do I Make Cheesey Soup Quesadillas?

Here is how you make Cheesey Soup Quesadillas:

Cook chicken breasts, cut into small pieces. Add cheddar cheese soup, and mix until smooth. Add salsa of your choice. Add milk if needed for consistancy, depending on brand of soup used. Preheat oven to 400 degrees F. Put tortilla on flat surface, and spoon some of the mixture into the tortilla. Fold over in half, and use water to sort of seal tortilla. Bake in oven until tortilla is crispy.You can serve these with low fat sour cream, or extra salsa on top. If you like things spicier, add some hot sauce, etc. Enjoy!
