What Are The Ingredients For Tomato and Basil Soup Recipe?The ingredients for Tomato and Basil Soup are: 2 cans of good quality canned tomatoes1 medium onion, red or white 1 medium potato, peeled 1 Vegetable Stock Cube (1 use Knorr) made up with boiling water usually 0.5 pint\1 cup is sufficient Some Fry Light Extra Virgin Olive Oil Spray, enough to cover the bottom of your pan or a splash of regular olive oil Basil, 10 or more leaves, roughly torn, but don't do this until the last minute to retain the wonderful flavour. How Do I Make Tomato and Basil Soup?Here is how you make Tomato and Basil Soup: *Peel and chop your potato into cubes*Peel and dice your onion*Make up your stock and water*Next, heat the oil and then fry the onion until it's reduced and has started going translucent, be careful not to burn. *When the onion is ready, add the stock water - BE CAREFUL, it usually rapid boils when the liquid hits the oil and splashes back so watch yourself! *Add the potato and simmer in the stock water until it's cooked and you are able to pierce one of the cubes easily it with a knife or fork*Then add your canned tomatoes and any seasoning you like. Simmer this for about five minutes. *Add some of your basil at this stage and then remove from the heat and blend the mixutre with stick blender or though a conventional blender until all the potato is smooth and the mixture is lump free. *Add the mixture back to the pan, throw in the rest of the basil and if you are feeling a bit naughty add some reduced fat cream or creme fraiche at this point to turn it into a cream of tomato soup - but once the cream is in, don't boil it as it will curdle. You could replace this with low fat\fat free natural yoghurt to reduce the calories and fat but make a creamy soup.
