1 large onion, diced, about 1 cup
3 or 4 carrots, sliced thinly, about 1 cup
3 ribs of celery, diced, about 1 cup
half pound lean ground beef (or turkey)
4 cups low sodium beef broth
1 large potato, peeled, diced, 1 cup
1 can (16 oz) tomatoes, diced, with juice
1 can (16 oz) cut green beans, rinsed and drained
1 cup corn kernels, frozen, or canned, drained
black pepper and salt to taste


How Do I Make Hobo Soup?

Here is how you make Hobo Soup:

Prepare onions, carrots and celery. Saute ground beef till pink is gone, drain well, add onions, carrots and celery and saute 2 minutes, stirring as needed. Add broth and potatoes and simmer 20 minutes till carrots and potatoes are tender. Add remaining ingredients and simmer another 5 minutes. Season to taste. Serve with a dash of Worchestershire sauce and a piece of crusty bread. If soup seems "not soupy enough", add a little more broth or water.
