Here is how you make Turkey Vegetable Soup with Stuffing Dumplings:

Put olive oil in a stockpot and heat over medium high heat. Add chopped onions and garlic and cook until soft and translucent, about ten minutes, Add the carrots, celery, thyme stock, and broth and bring to a simmer. Cook until vegetables are just soft, about ten minutes. While the stock is simmering whisk the eggs, flour, salt and some pepper together until smooth. Add the stuffing and mix until well combined; cover and reserve. When broth has finished simmering roll level tablespoons of the dumpling mixture into balls with wet hands and drop into simmering soup. Cook until dumpling float, about three or four minutes. Gently stir in the turkey and corn, season to taste, and simmer until heated through.
