Put 3 cups water and 1 cup vegetable stock into large pot. Bring to boil. Add barley and potatoes, reduce heat to medium. Allow to cook for 10-15 minutes, then start tofu while pot continues to cook.Drain and cube tofu. Bring sesame oil to high temperature in sauce pan and add tofu. Cook until tofu browns on the outside. (this takes approximately 10-15 minutes).Add cooked tofu, bag of stir fry vegetables, and frozen broccoli to pot. Pour any remaining sesame oil into pot.Add the remaining vegetable stock and soy sauce. Bring back to a boil, then reduce heat to medium and allow to cook for another 10 minutes, stirring occasionally.Remove from heat, then stir in kale.
