Here is how you make Mo's Vegetable Soup:

Add water, boullion cubes, and chopped vegetables to large pot and bring to a boil. (Add more or less water as needed - will vary with the size and amount of vegetables you use). Reduce, cover and simmer for 30-45 minutes or until vegetables are tender.While soup is simmering, cook and chop 2 chicken breasts into small bite size pieces (I prefer to chop chicken into pieces and then boil for 4-6 mintues in a small amount of water until cooked through - chicken will be nice and tender).Add chicken pieces to the soup in the last 10 minutes or so.Season soup with salt and pepper to taste - or use Vegeta to season if you have it.Number of Servings: 5Recipe submitted by SparkPeople user CHEVYX2.
