What Are The Ingredients For Delicious Tofu Spaghetti Recipe?The ingredients for Delicious Tofu Spaghetti are: Eggplant, fresh, 1 eggplant, peeled (yield from 1-1/43 Cloves of garlic 2 tablespoons of olive oil or vegetable oil Fresh Zucchini and/or Squash, 1 cup 3 oz of fresh parmasean cheese Healthy Choice Traditional Pasta Sauce, 1/2 cup, 2.5 cup Tofu, extra firm, 1 block ( Peppers, sweet, red, fresh, 1 cup, chopped Parsley, 1 cup Red Ripe Tomatoes, 2 plum tomato Mushrooms, fresh, 1 cup, pieces or slices Ken's Honey Mustard Dressing, 2 tbsp Whole Wheat Spaghetti, cooked (pasta), 375 grams Onions, raw, 1 cup, chopped How Do I Make Delicious Tofu Spaghetti?Here is how you make Delicious Tofu Spaghetti: "Meat/Base" Mixture1. Drain tofu and drain excess water. Crumble or break apart tofu into tiny pieces into a bowl. Set aside.2. Chop fresh parsley and 1 tbsp of garlic. Add to the tofu. *Dried parsley can be substituted for fresh.3. Add 2tbsp of Honey Dijon mustard or dressing to the mixture. Mix well. Set aside.*Make sure you really mix the tofu. You want small little chunks that look like ground chicken. Keep mixing until you have reached this consistency. You don't want huge chunks.4. Fill a large pot with 8-12 cups of water and boil over medium high heat. Add spaghetti noodles and cook until soft. Drain and set aside. Sauce1. Dice up onions, mushrooms, eggplant, zucchini, tomatoes, bell peppers and garlic. Heat 2 tablespoons of vegetable or olive oil in a skillet or stick free pan over medium/high heat. Saute onions, mushrooms and garlic until the onions start to become translucent. Turn to low medium heat and continue sauteing. Next add the eggplant, zucchini, bell peppers, and tomatoes. Cook for another five to seven minutes.2. In a meduim/large pot warm tomato sauce over medium heat. Once it starts to bubble add vegetable mixture. Cook for ten minutes constantly stirring. Next add the tofu mixture, mix well. Cover and let simmer over low/medium heat for 10-15 minutes and then add the parmasean cheese. Let simmer for another five minutes or until cheese is melted. Remove from heat and serve!*You can either mix the sauce with the noodles or simply dish out the sauce on top of the noodles for a more traditional style spaghetti!
