1 Large Zucchini, cut into chunks (I used 1/2 large and smaller yellow one)
8oz sliced mushrooms
1/2 carton Grape tomatoes, halved (I used 20 pieces)
1 medium onion, chopped
1-2 Cloves garlic, crushed
3 Tbsp Olive oil
1 jar Spaghetti/Marinara sauce (I used Newman's)
1 small package Buitoni Whole Wheat cheese Tortellini
fresh ground pepper to taste
1 smaller-medium Yellow Summer Squash, cut in chunks

**Top with fresh grated Parmesan or Mozzarella cheeses. (Not included in nutritional info of recipe)

You could also add other veggies your family likes or switch ones you don't like.

Here is how you make Summertime Tortellini Spaghetti:

1. Chop up all veggies.2. In a large skillet warm 2 Tbsp Oil. Add in onion & garlic let warm up. Add in all other veggies and top with the other 1 Tbsp of oil. Sautee veggies. 3. Cook pasta according to package directions.4. When pasta & veggies are done cooking on stovetop combine together. Mix well and add Marinara sauce. Stir well to coat evenly.Makes 5 large 15oz servings for just over 300 calories.
