Here is how you make Kale and Pine Nuts - spicy style:

Brown 2 T of pine nuts in a small amount of either olive oil or butter. When brown (takes two to three minutes total) set aside on paper towel to drain.In same skillet with trace of oil left, add 10-15 chopped baby carrots, and one slice of vidalia onion diced into small pieces. Cook carrots and onion until carrots turn a transparent color. You may want to add a little chicken broth to keep them from scorching.Salt or Nature's Seasoning adds flavor to the onions, but is not required.Add 1 to 2 Tbsp of canned mushrooms. Add 3 Cups of fresh kale, torn into small pieces and separated from the stalks (which can be thrown away.)Add 1/4 C of Chicken broth - I use low sodium 99% fat free.Add Tony Chachere's More Spice Seasoning and Crushed Red Pepper flakes to taste.Allow kale to cook approximately two minutes or until it turns a beautiful color. Do not overcook. Carrots will be al dente.Serve over boiled egg noodles in small quantities.
