(add garlic if you like)-Add spinich leaves a little at a time until the leaves wilt a bit, making room for more. Stir in fresh leaves as you go, making sure to incorporate well with the leaves added first. (If using frozen, just heat until thawed and warmed)-Add lemon juice (or cooking wine) to the spinach as it is wilting/cooking. (I have add 2 tbs, but you can add to taste.)-Once all spinich has been added and wilted, add can of tomatoes (with juice). (It helps a little to heat the tomatoes first, as it aids in the spinich cooking process.) Stir to mix in with the spinich.-Add feta cheese and stir to incorporate.
