Cut squash in two. Rub olive oil on all fleshy surfaces. Place skin side upon baking pan with sides to catch juices. I like to line the pan with aluminum foil for easy clean up. Be sure to recycle your foil. Cut up apple and mix with cinnamon to taste--you can add other spices as you like. Put in greased and covered baking dish. Add pure maple syrup (not a high fructose corn syrup variety). I like organic. Cover and place baking dish on the same baking sheet as the squash, if there is room. Bake at 350 for 45-50 minutes (larger squash can take an hour). Scrape flesh from squash. Add baked apples. Stir and mash thoroughly.
