Here is how you make Bacon Squash:

makes 8 1 cup servings.Cook bacon in a large skillet on your stove until done to your liking, remove bacon from pan with slotted spoon. Remove all but 2 tbsp. bacon grease from pan, cook diced onion in remaining grease. Add garlic to onion, when onion and garlic are cooked, add bacon and squash, stirring as you add squash to get a good mixing. Cover pan, cook for 5 minutes. Add diced tomatoes stirring it all together, cover and cook for 10 minutes. Add cheese over the top, cover and cook until cheese is melted.
