2 tbs canola oil
1/2 tsp salt
1/4 tsp paprika and/or garlic powder (optional)

1/4 cp unsalted butter
3 cloves garlic minced
1/4 cp flour
1 qt milk
salt/pepper to taste

1 cp heavy cream
1/4 tsp salt
9 no-cook lasagna noodles
1 1/3 cp grated parmesan cheese

Here is how you make Creamy Butternut Squash Lasagna:

Heat oven to 450. Toss butternut squash cubes with oil, salt, pepper and seasonings. Place on cookie sheet and bake approx. 30 mins until tender, stirring half way. Mash with potatoe masher and set aside.Heat butter in large skillet and cook garlic until tender Stir in flour and cook 3 mins until thick and bubbly. Whisk in milk until smooth. Bring to simmer and cook until thick (10 mins), stirring occasionally. Stir in butternut squash and season with salt and pepper. ** Sauce may be made 3 days in advance and refrigeratedBeat heavy cream in lg bowl until foamy, gradually add 1/4 tsp salt and continue beating until med peaks form.....lift beater straight up and the tip of the peak should curl over slightly. Set aside.Pour 1 cp of butternut squash mix into greased 9 x 13 baking dish. Place 3 lasagna noodles on top in single layer. Spread 1/2 of remaing butternut over noodles and sprinkle with 1/2 cup parmesan cheese. Place another layer of noodles and remaining butternut squash on top. Sprinkle with 1/2 cup parmesan cheese. Place the final layer of noodles on top. Spread the whipped cream over the final layer making sure noodles are completely covered. Sprinkle with remaining 1/3 cup parmesan cheese. Cover dish tightly with foil and bake for 30 mins. Remove foil and continue baking until bubbly and golden brown. Let rest 5 mins before cutting and serving.
