1 1/2 lb. tofu
1/3 cup of oil (I did not use but used water to saute)
3 cloves of garlic
1 T grated fresh ginger
2 1/2 cups carrots, thinly sliced
1 large onion chopped
2 red peppers, sliced
2 1/2 cups of mushrooms, halved
1 1/3 cups water (or vegetable broth)
1/3 cup miso
2 1/2 T honey
2 1/2 T soy sauce
2 1/2 T cashew, almond, or peanut butter
1 1/2 tsp. wine vinegar
1 T arrowroot, dissolved in 1/2 cup of water


How Do I Make Chinese Rainbow Stew?

Here is how you make Chinese Rainbow Stew:

Press tofu. Heat water, broth, or oil in large pan. Saute garlic and ginger, lightly. Add remaining vegetables to the pan cooking until slightly crunchy. Set aside and make sauce.Combine 1 1/3 cups of water or broth, miso, soy sauce, honey, peanut butter and wine vinegar in a blender. Blend until smooth. Add to vegetables.Cut pressed tofu into 1/2 inch squares and add to vegetables and sauce. Heat, stiring gently so as not to tear the tofu. When entire mixture is hot, add dissovled arrowroot and continue to stir until thickened. Try to boil to maintain the nutritional value of the miso. Serve over rice or noodles.
