Here is how you make Poor Man's Stew (crockpot):

THE NIGHT BEFORE:dump beans into crock, cover with water (to about an inch or two above beans) cover and leave out on counter for the nightin seperate dish: Slice about 1/2 bag of baby carrots. Dice the onion. mix in bowl, cover and put in fridge.FIRST THING IN MORNINGat this point either keep excess water in crock OR drain and add some chicken broth (not too much, the salt makes beans hard to soften while it cooks)add canned tomato, tomato sauce, and cut veggies. Add water to suit your taste in thickness( (I just barely cover all ingredients)Add any desired seasoning EXCEPT SALT. Mix all well.Place on low for the day (high if planning to eat in 4-6 hours)Once you get home, give a good mix and enjoy. Salt to taste. Is good in fridge for about 2 days (gets thicker and better I think)* you can also cut up cheap chicken (I get legs or thighs on sale) and use instead of pork.
