2 tsp olive oil
1 pound boneless lamb shoulder cut into cubes
4 red or gold Yukon potatoes, unpeeled, course chopped
3 carrots, peeled and cut into bite size pieces
1 onion , course chopped
2 leeks, rinsed, with white and light green sliced coarsely
1 large turnip, peeled and coarse chopped
2 TBS Flour
1 bay leaf
1/2 dried Rosemary
1 tsp sea salt
1/4 ground black pepper
1 c. green peas (fresh or frozen)


How Do I Make New Irish Stew?

Here is how you make New Irish Stew:

In large non stick pot or deep skillet over medium-high heat, heat oil. Working in batches add meat and brown on all sides. Transfer meat to a medium bowl as it browns.Add potatoes, carrots, onions, leeks and turnip to pot. Cook 10 minutes, stirring occassionally. Stir in Flour until blended. Add 3 cups of water, bay leaf, rosemary, salt and pepper. Bring to boil, reduce heat. Add meat and simmer uncovered until meat is tender. 50 to 60 minutes.
