1 large onion, finely chopped
1 each red and green pepper, seeded and chopped
1 tsp. ground coriander
1/2 tsp. ground cinnamon
2 medium sweet potatoes, peeled and cut into 1/2-inch cubes
1 14-oz. can crushed tomatoes
1/4 cup water
1 Tbsp. lemon juice
1 can garbanzo beans
1 medium zuchini, chopped
3 cups cooked couscous


How Do I Make Morrocan Stew?

Here is how you make Morrocan Stew:

Heat oil in a soup pot over medium heat; add onion, red and green bell peppers, coriander and cinnamon and cook, stirring occasionally until onion is soft (about 5 minutes). Stir in sweet potatoes and cook, stirring often for about 5 minutes more. Add tomatoes, water, lemon juice and garbanzos. Season to taste with salt. Cover, reduce heat and simmer for 15 minutes.
