4 cups vegetable broth

1/2 cup quinoa, uncooked
1 cup Lundberg Wild Rice Blend
1 cup chopped spinach, prepared and well drained
1 lb (raw weight) italian seasoned grassfed ground beef



How Do I Make Sausage Porcini Stew?

Here is how you make Sausage Porcini Stew:

First, soak the dried mushrooms in the broth & stock for 30 minutes to soften. When they're soft, chop them into pieces as you like - go small or large, porcinis hold up very well once dried and reconstituted.Meanwhile, brown your meat in a separate skillet. This is the time to throw in any extra veggies you might want to add, like onions, peppers or diced carrot, but do not add the spinach at this time. When the porcinis are prepared and returned to the stock, add the quinoa and rice blend, the prepared meat, and finally the spinach. Over high heat, bring the stew to a boil, then reduce heat and cover to simmer for 45 minutes, or until quinoa has spiraled out and rices are tender. Broth will be rich and earthy, and rice will continue to absorb this broth. Thin with water to your tastes, or leave heartier.
