4 carrots thinly sliced
2 garlic Cloves crushed
1/2 c. EACH dried Apricots and Craisens
2 cups Chicken Broth
2 T. Tomato Paste
2 T. Lemon Juice
2 T All Purpose Flour
11/2 tsp. each Cumin,Ginger and Cinnamon

Here is how you make Slow and Spicy Middle Eastern Stew:

Heat olive in a skillet. Add half the chicken and half the eggplant. Cook til lightly browned. Put in a crockpot. Heat remainder of oil and cook remainder of chicken. Add to crockpot. Layer onions, carrots,and dried fruit over chicken and eggplant. Blend remainder of ingredients in blender or whisk. Pour over items in crockpot. Cook on high 5 hours or low for 8 hours.
