2 large white onions
2 large green bell peppers
1 large red bell pepper
1 large orange bell pepper
1 large yellow bell pepper
6 ounces diced celery - about 1.5 cups
7 small carrots, tops removed - about 8.5 ounces
1 large stockpot (8 quarts is a good size)
2-3 Tbsp minced garlic
Spices: Pinch of salt
Black Pepper, Paprika, Coriander, Oregano, Basil, Parsley, Onion powder, Garlic powder

Here is how you make Vegetarian Cacciatore Stew:

Rinse pinto beans and set aside to soak in a large pot (4 quarts is a good size) with 3-4 inches of water over top of the beans. Allow to soak overnight, or during the 8 hours you're at work.Discard soaking water; rinse beans, then return to the pot and refill with water, again leaving 3-4 inches over the top. Add a pinch of salt and bring to a boil. Boil until beans are tender, about 10-20 minutes. Once cooking is done, drain and set aside. Meanwhile, take 1 of the large white onions. Remove ends and outer skin layers. Cut into 1/4" thick slices horizontally, then into quarters.Rinse carrots and slice into bite-size rounds.Add cut onion, carrots and diced celery to the stockpot with about 1/2 cup of water and 1 Tbsp black pepper; heat over medium-high until produce is softened, adding water as needed to prevent sticking.While beans are boiling and carrot/onion/celery is softening, prepare the rest of the produce. For the remaining onion, remove ends and outer skin layers on the remaining large onion, then slice in half and cut each half into 8-10 vertical slices.Bell Peppers: Remove tops, seeds and veins, and cut into vertical strips as thick or thin as you prefer.Add beans, onion, bell peppers, canned tomatoes, mushrooms, and garlic to the stockpot with the onion/celery/carrots. Add water until all ingredients reaches 1-2 inches from top of the stockpot.Add spices as follows, or to taste:Paprika, Coriander: 1-2 TbspBlack pepper, Oregano, Basil, Parsley, Onion powder, Garlic powder: 2-3 TbspCook all ingredients over Medium heat, until all produce has softened, stirring occasionally.
