3 cups winter squash, peeled and chopped

Here is how you make Vegetarian Groundnut Stew:

Saute onion and garlic in a pan in the oil until the onions are transluscent. Add the squash, kale, and chili pepper and saute until flavors are mixed. Add tomatoes, apple juice and ginger and simmer until squash is tender, about 20 min. Add 1/2 cup green beans and simmer for another 5 min more. Add peanut butter, stir and simmer until ready to serve. Serve on top of brown rice or millet, with toppings: chopped green onions, parsley, cilantro, peaches or other fruit, crushed peanuts.
