Add cut up chicken breast (either cut up into strips or small chunks) and "stir fry" until cooked. Add celery, mushrooms and cook until celery is bright green. Mean while, in a sauce pan bring water to a boil and add noodles. Cook noodles according to package directions. Add almonds and green onions/scallions to stir fry, and mix together.In a measuring cup add 1/2 cup of water and mix in 1 Tbsp of cornstarch, mix together.
