How Do I Make Mitch Miller's Stroganoff?

Here is how you make Mitch Miller's Stroganoff:

Remove fat and gristle from 2 lb boneless beef chuck cut 1/2" thick. Sprinkle with salt and pepper. Add 1 stick butter to heated skillet. Put meat in and saute quickly. Push to one side; add 4 sliced onions (white part only) and cook til transparent. Push aside and stir in 5 T flour. Add can of condensed beef broth. Boil. Turn down heat and add 1 t Dijon mustard. cover and simmer for 1 hour. Five minutes before serving, add 4 oz can of drained sliced mushrooms and 1/3 cup of sour cream.
