Combine all dry ingredients. In a 2-cup liquid measuring cup add milk. Add eggs to milk and slightly beat eggs in milk. Using a cast-iron skillet, add 1/4 cup oil. Place skillet in the oven to heat oil. After 3-5 minutes remove skillet from oven. Coat the bottom and sides of skillet with oil. Set aside.Add milk/egg mixture to dry ingredients. Mix until dry ingredients are no longer wet. Then add heated oil to the batter. Stir well. Pour batter into skillet; smooth batter evenly in skillet. Bake in oven for 20-25 minutes or until golden brown. Cut into wedges. Serve warm.
