16 oz. Ronzoni Smart Taste Penne Rigate
2 Tab. butter
4 Tab. extra-virgin oil
2-3 garlic cloves, thinly sliced
2 medium shallots, finely chopped
1 1/2 pds. of fresh Swiss Chard, leaves cut into 1/2" strips and stems cut into 1/2" pieces
2 Tab. finely grated lemon zest
1/2 cup dry white wine
1/2 tsp. red pepper flakes
1/2 cup fresh ricotta cheese, low fat
Freshly grated parmesan cheese, for sprinkling on top if desired.
Crisp cooked bacon, crumbled, can be added for extra flaor, but not required or needed.


How Do I Make Rigatoni with Swiss Chard?

Here is how you make Rigatoni with Swiss Chard:

1. Bring a large pot of water to a boil. Add salt to the water and the pasta. Cook about 2-3 minutes less than the package indicates. Drain.2. Heat butter and oil in a large dutch oven over medium heat about 1 minute. Add garlic and shallots; cook, stirring, until fragrant, about 2 minutes. Stir in the chard, lemon zest, wine, 1 tsp. sald and the red pepper flakes. season with pepper. Cook covered , stirring occasionally, until chard has wilted and stems are cooked through.3. Stir in the drained pasta, ricotta cheese. Cook together stirring occasionally, until pasta is done to your taste. If you add the bacon, now is the time to do it. Serves on platter . Sprinkle with grated parmesan cheese.
