Here is how you make Taco Veggies:

Slice all veggies. Put 1 tablespoon of Olive Oil in a pan and add veggies and taco seasoning and cover.Cook to taste. I add the peppers and tomatoes last. That way the onions are really cooked and peppers are still crunchy. Makes 4 servings.I like this best served over mexican rice and black beans.
