1/4 cup diced sweet peppers
2 cloves garlic diced fine
10 oz frozen mixed vegetables
1/2 cup diced tomato
2 tblsp fish sauce
2 tblsp soy sauce
6 eggs beaten

Here is how you make Thai Omlet:

brown ground beef, onion, peppers, and garlic together till almost done. Add the frozen vegetables, fish sauce and soy sauce, cook until done, Add tomatoes and cook another minute. Set this aside. Beat the 6 eggs. Lightly spray a non stick skillet with cooking spray. Use 1/4 of the egg mixture in hot pan, and swirl egg to make a thin omelet, when cooked through, place 1/4 of the beef and vegetable mixture in the center of the omelet and fold all 4 sides up over the center. Place a plate over the top of the pan, and flip the pan over to remove the omelet onto the plate.
