2 tablespoons extra-virgin olive oil

Here is how you make Don?s Bacon and Sun-Dried Tomato Frittata:

Instructions1. Pre-heat oven to 200C degrees on fan-forced. 2. Lightly oil medium sized ceramic lasagne pan (such as Emile Henry). 3. Saut? bacon, shallots, garlic, capsicum, and Italian seasoning in olive oil for about 5 minutes until soft. Grind some cracked pepper over. Let cool slightly and spoon into pan.4. Beat eggs and then stir in sun-dried tomatoes and tasty cheese. Pour egg mixture over rest of ingredient in pan.5. Reduce oven temperature to 175C when putting pan in oven, and then bake on middle rack for 35-40 minutes until brown (switch setting from fan-forced to conventional oven after first 10 minutes).6. Test for doneness when inserted kitchen knife comes out smoothly. 7. Sprinkle remaining mixed parmesan & tasty cheese over and place back in oven for minute or two to melt cheese.8.
