2 tbsp Extra Virgin Olive Oil
1 cup, Red Onions, diced
1.5 cup Arborio Rice, Dry, Rinsed under running water
6 cup Vegetable Stock

4 tbsp Basil, chiffanade or chopped
3 medium tomatoes, diced
10 oz Mozzarelle (my favorite is Trader Joe's Marinated Mozzarella in Extra Virgin Olive Oil), diced into 1/2 inch cubes
1 tsp Salt

1 oz Parmesan Cheese, grated


How Do I Make Tomato, Basil, Mozzarella Risotto?

Here is how you make Tomato, Basil, Mozzarella Risotto:

In a pot, heat vegetable stock over low-medium heat. Chop tomatoes, basil and mozzarella. Combine in a bowl with salt and set aside. Heat olive oil in a large saute pan. Place rinsed rice into the pan and stir 2-4 minutes until rice begins to tan. Place onions in the pan and continue stirring for 3-5 minutes. Using a ladle, put about 1/2 cup of broth into the rice pan and stir. Once the broth is absorbed, repeat. Continue adding broth, stirring until absorbed and repeating until all broth has been used. Taste the rice for al dente texture (not too chewy, not too soft) as you near the end of the broth mix. Throughout the cooking process, adjust the heat on the broth pan, so it does not boil. Once all the broth is absorbed, Place the tomato/basil mixture into the rice pan. Stir over low heat for a few minutes. Additional salt may be added, to taste.
