Aduki beans, canned, 1 cup
Cilantro, raw, chopped, 2 tbsp
Water, tap, 1 cup

Here is how you make Tomato and Pepper Risotto with Aduki Beans:

Cook the onion and garlic in the oil for 2 minutes, then add the peppers and cook for another 2 minutes. Grind the coriander and cumin roughly with a mortor and pestle and add to the pan. Cook for 2 minute to allow spices to develop, then add the rice, tomatoes and water. Bring to the boil then turn down and simmer until the rice is cooked adding more water if necessary. Add the aduki beans and and coriander and stir through, season with the pepper and serve.You can use any type of beans in this dish, but aduki beans are a good source of iron if you don't eat meat.
