2 slices lower sodium bacon, chopped
1/2 large sweet onion, chopped
1/2 cup dry packed sundried tomatoes, chopped
1 8 oz container sliced baby bella mushrooms
3 large cloves of garlic
1 tbsp salt
pepper and crushed red pepper as desired
8-10 oz of part skim ricotta cheese
8 oz of light sour cream
1/2 lb dry spaghetti
2 tbsp parsley, chopped
grated lemon rind, if desired

add sliced bacon to pan over med high heat to render the fat. I used lower sodium bacon in my recipe. remove the cooked bacon but leave the remaining grease and lower heat to medium. Cook the chopped onion, sundried tomatoes and mushrooms to the pan (sauce pan) to cook until render their juices (about 7 mins). Add the fresh garlic and salt to the pan to season during this process and some pepper and crushed red if you like heat. Add the sour cream and ricotta and turn down to lower heat, mixing until it's thick but still saucy. You can thin with milk if needed. Cook pasta according to package directions but reserve about a quarter cup of pasta water before draining. Add drained pasta and the water to the pan. Season more if needed, and add parsley and some grated lemon peel if desired.Serving Size:?makes 4 servings of about 1.5 cups of pasta per person
