Cut Zucchini in half length-wise, then cut each half in half. Scoop out insides, leaving some of the flesh. Cut tomatoes in half and hollow out. Brown chicken. Add onion and carrots. Sautee with chicken until soft. Crush 1 serving of cheez-it or other crackers. Add to meat mixture, then add egg white. Mix well and add parmesan cheese. Spoon into vegetable boats.
