4 large tomatoes
Knorr Sides - Spanish Rice
1/2 cup salsa
8 oz. ground turkey breast


How Do I Make Stuffed Tomato?

Here is how you make Stuffed Tomato:

Coat pan with spray olive oil. Brown ground turkey breast. Add Knorr Side - Spanish rice and water (see directions on package). Bring to a boil. Simmer covered for 8 minutes. While the rice mixture is cooking, core out tomatoes, saving the "insides" in a bowl. Place the tomato "insides" in with mix/turkey mixure. Add 1/2 cup of salsa. Scoop rice/turkey mixture into the four hollowed out tomatoes. Fill to top. There will be some rice mixture left over, which can be used as garnish on plate to hold tomato up. Place on a baking sheet/small cake pan. Cook at 350 for 20 minutes. Spoon left over rice mixture onto four plates, placing a stuffed tomato in the center.
