1 large tomato, chopped
2 T. fresh basil
1 oz. shredded mozzarella OR diced provolone cheese
1 T. freshly shredded Parmesan or equivalent cheese

Meanwhile, chop vegetables.Cook linguine according to package directions, for shorter time listed (till al dente).While pasta is cooking, saute in oil, in a large skillet: mushrooms, and garlic for 3 to 5 minutes or until mushrooms start to lose some water. Add in zucchini, tomato, fresh herbs, and salt and pepper to taste, saute just until zucchini starts to turn less opaque (about 3 minutes).
