2 tsp dried basil
1 tsp salt
1/4 tsp pepper
1/2 cup cooked rice
1/2 cup shredded cheddar cheese
1 egg, lightly beaten

Here is how you make Beefy Tomatos:

Cut a thin slice off the top of each tomato and discard.Remove the core, and scoop out the pulp (saving this in a bowl) leaving a 1/2 inch thick shell. Reserve 1 cup pulp, and discard or save the remaining.Invert tomato on paper towel to drain well.In a nonstick pan, cook beef and onion ocer medium heat until meat is brown. Drain all liquid. Stir in basil, salt, pepper, and reserved pulp. Bring to a boil, then reduce heat and simmer until all the liquid has evaporated, about 10-12 minutes. Cook rice according to instructions, drain, and add to mixture as well as cheese and egg. Heat through.Spoon into tomato shells. Place tomatos into shallow, 2 qt baking dish coated with cooking spray. Bake uncovered at 350 degrees for 20-25 minutes.
