Here is how you make Paleo Tortilla:

Whisk all ingredients in large bowl until smooth. Let stand 1-2 minutes to thicken. Heat skillet and spritz/wipe with a small amount of oil. Pour 1/4 cup batter into pan and immediately swirl around to make into tortilla shape. Cover and cook until golden brown edges, about 2 minutes, uncover and flip.
