1 cup brown rice
1 package of ground turkey
Carrots (I had baby carrots on hand) - chopped
1-2 medium Onions - chopped
tomato paste
Salt/pepper
spices of your choice

Here is how you make (Golubtzi) - Stuffed Cabbage - with Ground turkey:

Head of cabbage needs to be divided into leaves. Try not to tear them. You can do this by two methods: 1. try to remove the leaves while the cabbage is raw then drop leaves into boiling water for 3 minutes to get them soft 2. put it in a pot of boiling water first for about 10 minute to get it soft and pliable. (note: it's important for the leaves to be soft so they are pliable)While you do this, saute half your onion and carrots in olive oil. Add this to the ground turkey. I used Trader Joe's frozen Brown rice, but you can cook your own. I didn't use the whole cup, but you can add however much you like. Add this to your ground turkey. MIX.Take a cabbage leaf and roll up some of the turkey mix (like a burrito). Boil a pot of water with the tomato paste and the remaining chopped carrots and onions. Salt and pepper. Once boiling, add the stuffed cabbage and cook for 40 minutes at a reduced heat. This was my first time making it (using my mother on my phone for guidance and support).Most Russians use beef, pork and other red meat and white rice. This is a lower fat version. Other alternatives is baking it in the liquid instead of stove top. I'm sure that's tasty too. Makes approximately 5 2 stuffed cabbage servings.
