12-16 oz seitan (beef flavor if available), cut into strips
1 med-large onion, cut lengthwise
1 green bell pepper, seeded, cut into strips
1 red bell pepper, seeded, cut into strips
1 jalapeno, seeded, ribs removed, minced (use half a pepper if you don't like spicy food)
1 yellow summer squash, small, julienned
2 tbsp lime juice
2 tbsp olive oil
1 tsp cumin
1 tsp salt
1/2 tsp ginger
1 tsp ancho chili powder
salt & pepper
half a can of light beer


How Do I Make Vegan Fajitas?

Here is how you make Vegan Fajitas:

In a bowl or plastic bag, combine the beer, lime juice, sugar, garlic and jalapeno. Add cumin, ginger, salt & pepper to taste, and additional chili powder.Add seitan strips, making sure they're completely covered with marinade. Let sit at least an hour, up to 8 hours if it's in the fridge.Heat olive oil in a large skillet on medium. Add onions and peppers, sauteing 3 minutes.Meanwhile, heat a smaller skillet on med-hi and toss in the seitan with about a third of the marinade. Cook, turning occasionally, until most of the liquid has cooked away.Throw half the remaining marinade in with the veggies and add squash. Saute another 3 minutes, then add the rest of the marinade. Saute 3-5 minutes until veggies are soft and sauce is slightly thickened. (You might need to adjust these cook times for your stove--don't overcook the vegetables! They should be tender and firm but not crunchy)Serve over rice, with tortillas or on its own.Makes 7 to 9 1-cup servings.If you can improve this recipe, leave a comment!
