1 medium eggplant, cubed
1 medium beet, cubed
1 fennel bulb, chopped
1 large carrot, chopped
1 sweet potato, cubed
1 medium red potato, cubed
1 can tomatoes & juice (14-15 oz size)
2 cups lentils
4 cloves garlic
1/2 cup plain bread crumbs
2 stalks celery, chopped
3 Tbsp olive oil

Here is how you make Lentil Cassoulet, Vegan:

Makes 8 1-cup servingschop all vegetables and combine (except for eggplant and canned tomatoes) - mix 1-1/2 Tbsp olive oil in with vegetables - season with rosemary and oreganoplace in baking pan and cover loosely with aluminummix eggplant with the rest of the olive oil, season and place in another baking pan covered loosely with foilbake the vegetables at 400 degrees until tender, stirring every 15 minutes for 1 hour - put the pan without the eggplant in first and bake for 30 minutes, then put the eggplant in the over, too.While the veggies are roasting, rinse the lentils and place in pan covered by at least two inches of water. Bring to boil and boil for approximately 3 minutes, then reduce heat and cover, simmering until tender - depending on the age of the lentils, this could be fifteen minutes to an hour (check on the lentils when you stir up the veggies.)After veggies are roasted combine the pans together, drain lentils and then add the entire can of tomatoes to the lentils. Stir well. Layer oiled casserole dish with 1/3rd of lentil mixture, then 1/3 of veggies - until done. Top with the bread crumbs. You can drizzle with a little more olive oil at this point if you like. Cover with one of the pieces of aluminum foil from off the veggies and bake at 350 degrees for 35 minutes.
