1 small onion, chopped finely
2 celery stalks
1 garlic clove, minced
1 tbsp olive oil
2 slices wheat bread
1 cup chopped walnuts
1 cup prepared TVP--textured vegetable protein, or any vegan "beef"
0.25 tsp ground pepper
0.5 tsp oregano
0.5 tsp basil
1 tbsp nutrional yeast flakes
1 tbsp tahini or any nut butter
1 tbsp tamari
2 tbsp vegan worcestershire sauce
0.25 cup ketchup



How Do I Make Emily's Meat Loaf, Vegan?

Here is how you make Emily's Meat Loaf, Vegan:

Preheat oven to 350 degrees. Lightly oil an 8x10 pan. In a large saucepan, sautee the vegetables until onions are transluscent, then set aside. Blend the bred and walnuts in a food processor, set this aside also. In a large bowl, combine the vegetables and trhe "beef" mixture, basil, oregano, pepper, tahini, nutrtional yeast, tamari, worcestershire sauce, and faux cheese ( not added into recipe). Mix together, I find using my hand works best, then add bread, walnut mixture. Press into the pan, and bake for 30 minutes. Then take out and add ketchup ontop, and bake 15 minutes more. Remove from oven and let sit for 5 minutes. Serving--6 Number of Servings: 6Recipe submitted by SparkPeople user FRENDLY.
