1 garlic clove, peeled and crushed
1 large egg, beaten
4 tablespoons grated Parmesan cheese
125g/4 oz. asparagus, trimmed
150g/ 5 oz. baby carrots, trimmed
150g/5 oz. french beans (fine green beans)
150g/5 0z. cherry tomatoes
175g/6 oz. shrimp, peeled
125g/4 oz. Mozzarella cheese, thinly sliced

Here is how you make Cheesy Vegetable and Shrimp Bake:

1. Preheat the oven to 200C/400F/Gas Mark 6 about 10 minutes before required.2. Cook the rice in lightly salted water for 12-15 minutes or until tender. Drain.3. Stir the garlic, beaten egg and 2 tablespoons of the Parmesan into the rice and season with salt and pepper.4. Press mixture into greased oven proof dish (approx. 9 inch square)5. Bring a large saucpan of water to the boil and drop in the asparagus, carrots and beans. Boil for 3-4 minutes and then drain and leave to cool.6. Halve the cherry tomatoes and mix them in with the cooled vegetables.7. Spread the vegetables over the rice and sprinkle the shrimp evenly over the top of the mixture. 8. Cover the mixture with the mozzarella and sprinkle the remaining Parmesan cheese over the top.9.
