Here is how you make Vegetable Frittata:

Heat oil in a pan. Sautee onion and vegetables until veggies are cooked through and chayote is soft to touch. In a blendre, mix eggs, egg whies, milk and ricotta until fully blended. Pour egg mixture over veggies and stir. Heat on stove top for 10 minutes, until set.
