2 lg carrots, shredded
1 1/2 cup zucchini, shredded
1 cup yellow squash, shredded
1/4 cup vidalia onion, chopped fine
3/4 cup all purpose flour
2 cloves garlic, minced
2 large eggs, lightly beaten


How Do I Make Vegetable Rosti?

Here is how you make Vegetable Rosti:

1. Grate sweet potato, carrots, zucchini, and yellow squash one a clean kitchen towel. Wrap towel around veggies and squeeze to remove excess liquid( if you do this step, use 1/4c cup flour, if no add more flour) Transfer vegetables to a bowl, and stir in onion, flour and garlic. Fold in eggs, and season with salt and pepper if desired.2. Coat large skillet with cooking spray and heat over medium heat. Spoon 2TBSP of Rosit mixture for each patty and shape with a spoon. Cook 2 to 3 minutes or until bottoms are crisp. Carefully flip with spatula ad cook 2 minutes more or until browned on both sides. For vegetable that you did not squeeze the excess liquid from you will have to cook a bit longer.
