110 broth mix (can use any lentils, beans chickpeas etc. dry or canned)
3 garlic cloves
200g carrot (about 2 med/large)
420g corgette( 2 med/large zucchini)
170g peppers (about one large)
160g mushrooms
3 med celery sticks
2 tsps of oil*

* You might want/need to use more i was just trying to keep it to a minimum

Here is how you make Cheap Vegetable stew - great when budgeting both money and calories!!:

Makes lots - anthing between 4 and 8 servings depending on appetite or what you want to eat it with.* If using dried beans or a barley broth mix soak overnight in plenty of cold water - you can just use canned for ease (make sure canned in water for healthy factor!) then rinse with more cold water before use* put your pre-soaked beans/broth mix onto boil while you cook (will take around 30 mins til done)1) place oil in a BIG pan, heat on medium then add onions and garlic.2) When soft (and smelling good yum) throw in everything else and stir around a bit (see what i mean about precision?)3) allow to cook/soften for 10-15 minutes until all seems pretty cooked (carrots can still have some bite) Then add the tinned tomatoes4) allow to bubble away for another 10-15 then add your drained beans/broth mix/lentils (whatever your choosing)5) stir, then this can simply bubble away on a low heat until needed, be saved or eaten right away!Serve with brown rice for the ultimate in goody-goody eating!! * Tip:If vegetables and beans seems a bit to sparse/bland for you (gotta say i love the flavour) its easy to perk up with a few chillies or some curry powder Number of Servings: 6Recipe submitted by SparkPeople user HAPPYROO.
