1 tbsp dried parsley

Here is how you make Cod and Vegetable Stew:

Combine potatoes, onions, celery, bell pepper, garlic, thyme, salt and bay leaf with water in a large saucepan. Bring to a boil; reduce heat and simmer, covered, until potatoes are just tender, about 15 to 20 minutes. Transfer 2 cups of the vegetables and about 1 cup of liquid to a food processor or blender and puree.Return puree to the saucepan and bring back to a simmer. Add cod and cook until just opaque in the center, about 3 to 4 minutes. Gently stir in parsley, lemon juice and pepper.
