8 oz. Flat rice noodles
1Tbsp sesame oil
1-2 shallots, finely chopped
1-2 garlic cloves, finely chopped
1 zucchini, sliced
4-5 carrots, sliced
1 c. Snow Peas
2 Tbsp sugar
2 Tbsp rice vinegar
3 Tbsp fish sauce
1 tsp chili garlic sauce
cilantro (optional)
lime (optional)


How Do I Make Vegetable Pad Thai?

Here is how you make Vegetable Pad Thai:

Bring six cups of water to a boil and remove from heat. Place rice noodles in water and allow to soak for 7-8 minutes. Drain water and blanch noodles with cold water. Drain and set aside. Mix sugar, vinegar and fish sauce and set aside.Heat the oil in a large frying pan or wok. Saute shallots and garlic 2min. then add zucchini, carrots and snow peas. Stir fry until almost the desired tenderness. Add noodles, sugar mixture and chili sauce and stir fry until liquid is absorbed.
