How Do I Make Balsamic Vegetables Over Couscous?

Here is how you make Balsamic Vegetables Over Couscous:

Cook the couscous according to the directions on the box and set aside. I suggest adding some powdered garlic for taste.Add 1 tbsp of olive oil to a saute pan and wash/cut the vegetables you will be using. Add sliced zucchini and onions to the pan and allow them to cook until they look lightly translucent (approx. 5 min). Add the chopped spinach, mushrooms and tomatoes and allow them to cook for another 5 minutes. Lastly, stir in the balsamic vinegar and lower the heat. Let the food simmer for 5-10 minutes until the vegetables look thoroughly cooked.Serve the dish with half of a cup of couscous and approximately 3/4 cup of vegetables.
